Faux-ganoff

I need comfort food these days, y’all. I’ve made real stroganoff using this recipe and it’s amazing. Unfortunately, it requires a lot of time and effort - resources I don’t want to expend when I’m in need of comfort. This is my go-to recipe when I need to whip up something simple, filling, and relatively quick. It’s even a bit on the healthier side.

Ingredients

  • .5 tbs olive oil

  • 4 oz frozen chopped onions (those are a game changer!)

  • 1 lb ground turkey

  • 1 10.5 oz can cream of mushroom soup

  • 5 oz chicken broth

  • 1/2 cup of plain non-fat Greek yogurt

  • 3 tbs dijon mustard

  • 1 tbs garlic powder

  • salt and white pepper to taste

Instructions

  1. Heat oil in a skillet over medium heat, add the onions, sauté until clear

  2. Add the ground turkey and brown; drain excess fat.

  3. Stir in the cream of mushroom soup, broth, dijon mustard, and garlic powder

  4. Remove from heat and stir in the Greek yogurt, salt and pepper.

  5. Serve over buttered noodles or rice. For an extra healthy twist, serve over cauliflower rice or a bed of steamed broccoli.

This takes even my slow self less than 30 minutes. Serves 4-6.
